1. Beat egg whites with 3/4 cups of sugar to stiff peaks (with mixer), put aside
2. Beat egg yolks with 3/4 cup of sugar (in mixer)
3. Blend cream cheese and heavy whipping cream (in blender)
4. Thoroughly combine egg yolk mix and cream mix
5. Then fold in the egg whites
6. Dip graham crackers in coffee
7. Place them in a pyrex
8. Layer on cream
9. Repeat steps 7 and 8 in layers
10. Sprinkle with chocolate shavings
11. Cover with plastic wrap and freeze
