Soften the mascarpone with a fork and set aside.
Using an electric mixer, beat the egg yolks with the sugar to obtain a whitish creamy and fluffy mixture.
Using the mixer / beater, fluff the egg whites to form a white foam.
Carefully and slowly, add the egg whites to the soften mascarpone.
Still careful and slow, add the whites/mascarpone mixture with the egg yolks mixture.
Dip 1/2 of the cookies in coffee (do not soak) and make a layer.
Pour 1/2 of the egg/mascarpone mixture.
Make another layer of coffe/cookies.
Pour the remaining egg/mascarpone mix.
Sprinkle with cocoa.
Refrigerate for 2 to 3 hours before serving.
