Blend 1st 6 ingredients until smooth.
Spray non-stick sheet with canola oil spray
Place tofu ion single layer; pour 1/2 soy sauce mix over tofu.
Bake 30 minutes
Sauté onions, oil in wok/skillet for 1 minute
Add vegetables, remaining soy sauce mix
Stir fry for 5 minutes
Add tofu
Toss lightly
Serve with rice or pasta
