Color Me Vegan
Place the tomatoes and juice in a large soup pot over medium heat. Simmer for 30 minutes. Transfer the tomato mixture to a food processor or blender along with the basil leaves and puree until smooth. Return the puree to the soup pot.
Place the pot over medium heat and stir in the milk and butter. Season with salt and pepper. Heat, stirring, until the butter is melted but do not bring to a boil. Serve hot.
