Suggest a better description1. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat until hot but not smoking. Add the green bell peppers and the garlic, and saute until the garlic is golden, about 4 minutes. Add the roasted bell pepper and the red pepper flakes, and cook 1 minute.
2. Add the remaining tablespoon of oil, the shrimp, thyme, pepper and salt. Cook the shrimp mixture, stirring occasionally, until the shrimp turn pink and are barely cooked, 3 to 5 minutes.
3. Gently stir in the tomatoes and olives, and cook until the shrimp are opaque throughout and the tomatoes are heated through, about 2 minutes.
