Yummy Tortilla Soup
Add vegetable oil to a pot and heat over medium. Cook onion and garlic until golden brown. Add peppers, rice, bouillon and water to pot, bring to boil then lower to simmer, covered for 15 minutes.
Meanwhile put oven to 400 and then arrange tortilla strips onto a baking sheet. Put into oven (no nee to wait for preheat) and after 10 minutes start to check them for doneness. They are perfect when there is a slight flex still possible but crisp on the edges. Don't stress so much, these just go into soup and get soggy later. Set aside when done.
Add the rest of the ingredients (excluding tortilla strips and Morningstar Farms Chik'n Strips) to the pot and return to a simmer, uncovered for 10 minutes. Microwave the Chik'n strips in a bowl with 1tsp of water covered for 3 minutes. Add them to the soup and cook the soup for another 10 minutes.
Toss tortilla strips into bowl and add soup, serve.
