Suggest a better descriptionPlace the chicken in a 6 qt slow cooker, Mix the soy sauce, ginger, brown sugar, shallots and red pepper flakes in a small bowl. Pour over the chicken. Add the onion and the broth. Cover and cook about 4-5 hours on high or 8-10 hours on low. At the end of cooking time transfer the chicken to a plate and refrigerate till cool enough to handle, about 30 minutes. Drain the pineapple, reserving the juice in a small bowl. Add the cornstarch and vinegar to the pineapple juice, stirring until smooth. Add 1/4 cup hot liquid from slow cooker stirring until blended. Stir the cornstarch mixture into the slow cooker, Add bell pepper and sugar peas. Cover and cook on high until the mixture simmers and the vegetables are tender, about 15 minutes. Meanwhile, remove the chicken and cut into bite size pieces. Stir the chicken and pineapple into the slow cooker. Cover and cook until the chicken is heated, about 2 minutes.
