Suggest a better descriptionCombine first 5 ingredients in a small saucepan; stir well. Bring to a boil over medium heat, stirring often until sugar melts. Remove from heat; stir in 2 tablespoons mint leaves, orange rind, and lime rind. Combine pineapple cubes and next 3 ingredients in a large bowl. Pour sugar mixture over fruit; toss gently. Cover and chill 1 hour. Sprinkle with remaining tablespoon mint leaves. Yield: 5 servings (serving size: 1 cup).
