A tasty and nutritious meal, that is quick to prepare.
1. Open the can of tuna and drain out any fluid in the can.
2. Place tuna into a mixing bowl and break it apart with a fork. Add the green onion, celery, mayonnaise and stir to mix.
Season the tuna with salt and pepper, and refrigerate until needed.
3. Heat the oven's broiler and line a baking sheet with aluminum foil.
4. Spread butter/margarine generously on both sides of the french bread slices
5. Broil the bread until it is golden brown on top, for 2-3 minutes, flip and broil the other side for 2-3 more minutes.
6. Remove the bread from the oven and place the slices on a separate cool surface.
7. Gently spread tuna salad onto bread slices using 2 forks, making sure to spread all the way to the edges. Sprinkle the shredded cheddar cheese over each sandwich, and dust the tops with cayenne pepper.
8. Place slices back on baking sheet, and broil until the cheese is melted and bubbling, 5 to 6 minutes.
9. Remove from oven, and let cool for at least 1 minute before eating.
