Can add diced tomatoes, but makes it much more acidic
Careful adding water - can make it really watery. Most of the liquid may come from tomatoes
If too watery, can also simmer on low to take water out
Can add tortilla chips broken in to thicken
Makes 4 servings
Mozzarella is great, or mixed cheese
If using beef, scoop out scum periodically
