Tuscan Prawn Sauce for Steak

Peel and devein prawns.
Place your grass fed Australian Steaks on a hot BBQ or Grill and cook to your liking.
In a large skillet or electric frypan, heat the olive oil and add the prawns and garlic.
Toss/stir the prawns continuously until pink and cooked. DO NOT over cook or they will be tough.
Remove the prawns to a bowl for later.
Add the wine to the pan and deglaze the pan.
When the wine has reduced, add the pesto and stir to combine. Simmer until aromatic.
Add the cream and stir while heating through. Season with salt and fresh cracked black pepper.
Add both cheeses and stir continuously until the cheese is melted and combined.
If sauce is too thick, add more cream. If it is too thin, add more mozzarella.
Add the prawns back into the cream sauce, coat and heat through.
Simmer sauce until needed.
Serve over steaks with your choice of sides and either garlic or crusty bread.
