Preheat oven to 350. Butter a 9 inch round cake pan. Sprinkle the pan with half the brown sugar. Slice one apple into thin rings and lay over the brown sugar. Sprinkle with the remaining brown sugar and drizzle with the lemon juice. Sift the flour, baking powder, baking soda, cardamom, cinnamon, and salt into a medium bowl. Beat the butter, granulated sugar, and vanilla in a large bowl with an electric mixer at medium speed until creamy. Add the eggs, one at a time until blended after each addition. With mixer at low speed, gradually beat in the dry ingredients, alternating with the milk. Chop the remaining apple finely and stir into the batter. Spoon the batter over the sliced apple. Bake for 45-55 minutes, or until a toothpick inserted into ther center comes out clean. Cool the cake in the pan for 15 minutes. Turn out onto a rack. Serve the cake warm or at room temperature.
