Stir yeast and honey into warm water and let sit 5-10 minutes, or until mix starts to foam.
Pour in salt, oil, 3 cups of flour and stir. Knead for 6 minutes ( stand mixer on high)
Grease bowl, let rise for 1-2 hours
Pizza -
Flatten dough out on pizza pan ( I use small 9 inch pan and divide dough in half to make two smaller pizza's )
Spread good amount of greenmill pizza sauce, then pepperoni
Add shredded mozzarella
Place thin provolone slices over it
Place green pepper, green onions, pepperoncini's and mild italian sausage over top.
Sprinkle with parmesan
Bake on convection at 425 on lowest rack for 5 minutes. Decrease heat to 400 degrees and cook until top starts to brown. Move to top rack and cook 3-4 more minutes.
