This is my Mum's delicious waffle recipe. They come out so nicely - soft on the inside but lightly crispy on the outside. Heavenly with icecream and pure maple syrup.
Combine dry ingredients in a mixing bowl.
Warm butter and milk together (around 2 minutes in microwave).
Beat eggs lightly with a fork and mix in the vanilla.
Stir the egg mixture into the dry ingredients then stir in the milk mixture.
Allow to stand 1 hour before using.
Preheat a waffle iron and spray or brush the cooking surface with oil. Place a large spoon of mixture on the iron and spread. Close the lid and cook until golden brown.
Serve with ice cream and topping if desired.
