Chicken Au Jus Stock
Mix all (except port) bring to a boil, turn off the heat, and add port.
In a large pot saute shallots in the butter for 1 min. add minced garlic, deglaze the pan with whiskey then add the chicken au jus stock and cook and simmer - reduce to 3 cups about 25 min.
Add heavy cream and reduce again to 5 cups.
Mix lemon juice with cornstarch; slowly add to the simmering sauce and cook until it slightly thickens.
Remove from heat and add the peppercorns, mix well.
