A tasty and healthy vegetarian meal
Rinse the white beans in cold water and put them in a saucepan. Cover them at least double their height with boiling water and put a lid on. Leave them to soak 4 hours to overnight.
Drain the water off the beans and cover them double again with cold water. Put the lid on and put the saucepan on a high heat until the water boils. Do NOT add any salt. Simmer the beans in the water for 1.5-2hours (until they are just soft but NOT squishy). Drain the water from the beans.
Wash (peel) and chop the vegetables and basil. Crush the garlic cloves.
Grate the Pecorino Romano cheese.
Toast one side of the bread under the griller until it is brown.
Put the cheese on the un-toasted side of the bread and toast it to brown again.
Keep the bread warm till needed.
Heat the oil in a frypan and cook the garlic and onion till lightly browned.
Add the tomato and beans and cook till the tomato is soft.
Add the spinach, stock and salt and pepper and stir while heating till the spinach is wilted.
Take the frypan off the heat and stir through the basil.
Put two cheese toasts on each plate and spoon the tomato and bean mixture over them.
Serve.
