A knock-off of the popular Olive Garden soup of the same name. Comfort food of the highest order!
1. Brown and crumble sausage; remove from pan and set aside; drain grease
2. Chop and brown bacon; remove bacon and set aside; drain all but 2T of grease
3. Suate onions, potatoes and garlic in reserved grease until onions are translucent
4. Add sausage, bacon, and chicken broth
5. Simmer over medium-low heat until potatoes are tender
6. Add the chopped kale and salt; simmer until kale is tender, about 10 minutes
7. Add the heavy cream, stir and remove from heat
We use home-made chicken stock and water (50/50 mix) for heartier flavor. May substiture escarole or Swiss chard for kale.
