This delicious salad started out life as a salsa recipe from epicurious.com and has morphed into one of our favourite salads. We always have it with Grilled Cumin Chicken.

Avocado Tomato Salad Ingredients

2 large tomatoes seeded and chopped in large chunks1/2 tablespoon Pickled jalapeno pepper finely chopped
2 large Avocados cut in large chunks Juice of 1 lime (approx. 1 - 2T)
1 tablespoon Red onion cut in very fine strips1 teaspoon Salt

Instructions for Avocado Tomato Salad

The avocadoes and tomatoes should be approximately the same size. Combine all ingredients and serve immediately. I often prepare the entire dish ahead of time without the avocados and then add them at the last minute. Be sure to seed the tomatoes or there will be too much juice. Adjust lime juice so there's not too much liquid.

This is very good. I cut back on the salt just a little and added sliced green onions with tops in place of the red onion. Next time, I will add more jalapeno for a little more spice. 5 stars!!

We LOVE this salad. You can add a little more jalapeno if you like spice. We have also found it's good to let it sit for a while so the flavors can blend.

We are avid fans of Mexican or Southwestern foods. I served this with "Pan Burritos and Meat Patties", both of which are in the B.O. database. Excellent.
