Ready in 15 minutes
This delicious salad started out life as a salsa recipe from epicurious.com and has morphed into one of our favourite salads. We always have it with Grilled Cumin Chicken.
"Love this salad! I had to make it from memory tonight, since my Internet service was down. The only thing I got wrong was the lime juice. I used a simple vinaigrette of basil-infused olive oil and red wine vinegar. Tomato and avocado are a sure-fire, no-miss combination! I'm going to make it all summer long."
The avocadoes and tomatoes should be approximately the same size. Combine all ingredients and serve immediately. I often prepare the entire dish ahead of time without the avocados and then add them at the last minute. Be sure to seed the tomatoes or there will be too much juice. Adjust lime juice so there's not too much liquid.

Healthymommy 2y agoEasy and yummy! I opted for a dash of lemon juice instead of lime to preserve the green of the avocados & added a dash of raspberry vinaigrette. We will definitely make it again!
