Memphis-Style Barbecue Tofu

Excellent served with biscuits (or cornbread), greens (collards are my favorite), and vegetarian baked beans (or lima beans and corn cooked in butter with a little salt and pepper). In addition to being tasty right out of the oven, this makes an excellent lunch the next day (hot or cold), though you might have to hide some in advance if you want any left over! Keeps nicely in the fridge for up to a week (at least I think it will - it's never lasted that long in our house, even with only two people).

2 15-oz packagesExtra-firm tofu; pressed
1 tablespoonButter; (or vegan margarine if making vegan)
1/4 cupOnion; finely chopped
1 12-oz bottleCatsup; (choose a good-tasting brand, such as Henry's Grandma's Catsup
1/4 cupChili sauce; (not the Thai kind; Heinz makes a decent brand)
3 tablespoonsBrown sugar; firmly packed
3 tablespoonsMolasses
2 tablespoonsYellow mustard
1 tablespoonFresh Lemon Juice
1 tablespoonVegetarian Worcestershire sauce
1 tablespoonLiquid smoke
1 tablespoonGarlic powder; (or granulated garlic)
1/2 teaspoonSalt
1/2 teaspoonBlack pepper
1 teaspoonChili powder
1 dashCayenne powder; (or to taste)

Memphis-Style Barbecue Tofu Preparation

Preheat oven to 350 degrees.

Cut one of the blocks of tofu into bite-sized cubes (about the size of dice), and crumble the other block of tofu into small chunks (bite-sized and smaller). Place the tofu in a lightly oiled baking dish (large enough so that you only have one layer). Cook until tofu is lightly browned and slightly chewy, tossing every 15 minutes or so (it should take about an hour or two to cook the tofu properly).

While the tofu is cooking, prepare the sauce: In a saucepan, slowly saute the chopped onion in butter until soft and just beginning to turn yellow. Add remaining ingredients. Simmer about 15 minutes. Taste, and adjust seasonings.

Combine sauce and tofu in a baking dish, and bake at 350 degrees for 15 minutes (note that this is about how long it takes to bake biscuits to go with the barbecue tofu).

The sauce was sweet and thick and my husband LOVED it. He used the leftovers to make a BBQ sandwich for the next day's lunch. I really love the tofu cooking process though - what a great base for lots of things. Great side recommendations, too!! :)

not sure if this worked properly the sauce was great but way too much for the tofu and my tofu was dry and tough? oven too high? 1st time we've tried tofu so hope its cook error

This dish was absolutely succulent. My son, who loves tofu, enjoyed this dish completely. I was actually able to use 3 packs of tofu and had enough sauce. I added a little extra red pepper to give it a little kick. Delicious!!!

I stirred the tofu every fifteen minutes and cooked it a bit over an hour altogether. That seemed perfect. I made a lot of substitutions because I didn't have all of the ingredients but I stayed with the type food listed, and it was delicious. I couldn't find a simple chili sauce or liquid smoke so I went with a bit of hot sauce and some chipotle chiles (dried seeds). It's a flexible dish that can be made ahead of time and reheated. I reheated it in the oven the first time, then in the microwave for the leftovers. I hesitated to use two tubs of tofu but I am glad I did. The tofu shrinks some in cooking and you're going to want leftovers anyway. I served it over noodles with fresh steamed green beans. It was a nice combination.
