Thick, meaty, spicy, smoky chili. Very easy to make and filling - see notes for a recipe for leftovers. Freezes well and better the second day.

" Best chili I've ever had, I used a whole pound of sausage instead of the half lbs it called for, I also got spicy smoked sausage. It has a nice kick to it but it's not too spicy. Original recipe makes 6
1 poundLean ground meat
1 largeOnion; chopped
1 tablespoonChili powder
1 tablespoonGround cumin
1/2 poundSmoked sausage
1 12-oz canKidney beans; or Ranch Style beans
1 cupPace's picante sauce
1 cupV-8 vegetable juice
1 8 ounce canTomato sauce

Smoky Sausage Chili Preparation

Brown ground meat with onion in large sauce pan or dutch oven. Sprinkle chili powder and cumin over meat while cooking and stirring for about 2 minutes. Slice and quarter the smoked sausage. Add remaining ingredients and bring to a boil. Reduce and simmer uncovered for 20 minutes. Add a little water if it gets too thick.

Notes

For your leftover chili or for a little different dish, fry taco sized flour tortillas in a little butter in a skillet until they are soft. Put the chili in the middle and top with grated cheddar cheese. Fold over to make a messy taco! YummY!!!

I had fun making this, the cilantro idea was a good one. We also put shredded cheese and chopped onion on top.we also thought that some sour cream would also be a added treat. Thank you.

Excellent... Used a medium salsa and ground turkey. I also used tomato soup (8 oz can) instead of the tomato sauce... Added some cayenne pepper and it is the best chili I ever made. Very satisfied.

My husband has always been the chili maker in our family but his chili has always been too tomato-pasty so I was looking for a hearty meaty less red chili. This one was a huge hit! I loved the idea of using the V8 (why didn't we think of that before?). One week later and we just finished the leftovers (I tripled the recipe) and my husband is raving how this is the best chili he's ever had before. The only bad part is now I'm the official chili maker in our house!

I won!!! I actually won the 4th of July Chili cookoff with this recipe!!! I did add extra Cumin and also added fresh Cilantro while browning the beef. I put it in the Fridge overnight and then it was thick and even more tasty.

Very quick, inexpensive and easy meal. It has a nice subtle taste and i found it to be very more'ish. I left the recipe as is (i tend to play around with anything im trying thats new) but i liked this the way it was.
The kids liked it to, so it will be a welcome addition into our meal planner.
