| 1 tablespoonMaple syrup |
| 1 teaspoonDijon mustard |
| 1 tablespoonRed wine vinegar |
| 1/4 teaspoonKosher salt |
| 1/8 teaspoonBlack pepper |
| 2 tablespoonExtra-virgin olive oil |
| 8 cupArugula leaves |
| 1 eachPear; unpeeled, thinly sliced |
| 1/2 cupBlue cheese; crumbled |
Arugula and Pear Salad with Maple Vinaigrette Preparation
In a small bowl, whick together the maple syrup, mustard, vinegar, salt and pepper. Whisking constantly, slowly add the oil; set aside.
Arrange the arugula on individual plates and top with the pear and cheese.
Drizzle with the vinaigrette to serve.
