This recipe reminds me of some of the best grilled chicken we've had in Portugal.
1. Using a mortar and pestle, add the first 6 ingredients grinding to combine after each addition. Add olive oil and mix well.
2. Spread paste evenly on both sides of chicken.
3. Grill on a medium hot gas BBQ, turning several times, until done.
4. Serve with piri piri sauce on the side for those who like heat!
The amount of time it will take to cook the chicken will vary depending on the size of the chicken pieces, the outside temperature, the temperature of the chicken, and your particular BBQ. It usually takes me about 20 minutes, but can take as much as 15 minutes longer.
