1 md headgreen cabbage; cored and shredded
2 tbOnion; grated
1/4 cDijon-style mustard
3/4 cGranulated sugar
1 Green bell pepper; cored, seeded and finely diced
2 cPrepared mayonnaise
1/4 cCider vinegar
1/8 tsWhite pepper
2 mdCarrots; peeled and grated
1 tsSalt
2 tbCelery seeds

Corkys Memphis-Style Coleslaw Preparation

1) Wash cabbage and discard tough leaves. Core and shred. : Place cabbage, carrots, green pepper and onion into a large bowl. 2) In another bowl, mix together remaining ingredients. Pour over : veggies in large bowl. Toss well. 3) Cover and chill for 3 - 4 hours before servings. Per serving: 711 calories, 62 g fat, 37 mg cholesterol. Corkys Bar-B-Q, Memphis, Tenn.     Made this to go with baby back ribs later tonight -- took a little taste before putting it into the fridge to marinate for the suggested 3-4 hours, and OMG, it's hard to not go dish up a bowl NOW!! My teen son agrees, and we are looking forward to the slaw as much as the ribs tonight!!!!

    I made this recipe using a 16 oz. bag of 3-color deli cole slaw, adding green bell pepper and diced onion. I also used less sugar and mayo. Very tasty served with BBQ ribs.
