"I have made this recipe twice. Very easy. First time with vanilla then with almond extract. Liked the almond better. Also added about 2 tsp grated orange peel. I will make this again. All who have trid it have asked for the recipe. Next time I plan to finish with a chocolate dipped top to add sweetness and added presentation. Great recipe, thanks. Original recipe makes 1
1/2 cDried cranberries
2 cFlour
Add and beat well:
Beat together:
Add:
1 cSugar
1/2 cWhole almonds; Up to 3/4 cup
2 Eggs
1/4 tsSalt
2 Egg whites
1 tsBaking soda
1 tsVanilla Extract; or almond Extract

Cranberry Almond Biscotti Preparation

Mix well. Using a spoon form into two flat logs, 2-3" wide and about 10" long on a baking sheet sprayed with Pam or equivalent. Bake at 325 degrees for about 40 minutes. Remove from the oven and let them cool on the sheet for about 10 minutes. Transfer to a cutting board and slice across the log in 1/2" sections. Return to sprayed baking sheet and lower oven to 275 degrees. Toast slowly, turning once, until slightly browned. These will harden up nicely for storage and definitely need dipping. Next time, I plan to add about a tsp. of grated orange peel and perhaps some white chocolate chips. Recipe By : GladRag Dry ingredients: Stir in dry ingredients... I needed to get my hands into the mix to incorporate to ingredients. The dough was very sticky, wish I greased my hands first. Loved the biscotti, very easy to make. Will make it again for sure.

This was my first attempt at making biscotti and I was surprised at how well they turned out. I liked the contrast of the chewy cranberries with the crunch of the cookie. Next time I will cut the recipe in half, as it makes a whole lot of biscotti. Definitely add the orange zest, it adds a whole other layer of flavor.
