Just thinking what to do with stuff in our cabinets that need using (things starting to fall out when doors opened). This sounded pretty good.
Cut chicken breast into 3/4-inch chunks. Saute chicken in canola oil until chicken is no longer pink in the center. Remove chicken into a plate and set aside.
Add butter to the same pan and saute mushrooms, turning frequently, until just beginning to brown. Remove from heat and let sit..
In a large pot, bring to boil a large amount of water for cooking the pasta.
Meanwhile, prepare peas per package instructions. Simultaneously, (with your other two hands) prepare garlic bread using butter and/or olive oil, garlic, grated Parmesan, and french bread.
Add pasta to boiling water and cook until al dente. While pasta is cooking, add drained peas and chicken breast to the mushrooms in pan; heat over low heat so will be hot when pasta is done.
Drain cooked pasta and place on serving plate. Add serving of chicken, mushrooms and peas on top of pasta in each plate. Pour desired amount of Alfredo sauce on top, grate Parmesan on top of sauce. Serve immediately, seasoning to taste with salt and pepper; and, with garlic bread on the side.
