Breakfast and dinner recipe
1. spray a 10-inch non-stick skillet witn nonstick spray anehd set over medium heat. add the onion and cook, stirring occasionally, until softened, 5 minutes, transfer to a small bowl.
2.preheat the broiler.
3. whisk the eggs, egg whites, milk and pepper in a large bowl until blended. stir in onion, bacon, tomato, and cheese.
4. wipe the skillet clean, spray with nonstick spray and set over medium heat. add the egg mixture, reduce the heat to medium-low, and cook undistributed, until the bottom of the fittata is firm, 8-10 minutes/
5. place the skillet under the broiler and broil 5 inches from the heat until the frittata is set in the center, 3 minutes cut into 4 wedges. garnish with chives if using.
