this combination of chicken, spinach and cheese makes for an attractive, delicious dish. serve hot of cold with a crisp garden salad
whisk egg product, chives, and milk in large bowl. set aside
saute leek and yellow pepper in olive oil in large pan for 8 - 10 min, stirring occasionally until leek is tender. cool. add to egg mixture. stir
add spinach, chicken and peas. stir. pour into greased large frying pan. press or spread evenly. cook on medium for 5-7 min without stirring, until frittata is set around edge.
sprinkle with cheese. cover. reduce heat to medium-low. cook for 5-7 min until set. do not stir. remove from heat. do not remove cover. let stand for 5 min. cuts into 8 wedges
