Suggest a better descriptionHEAT oven to 350 degrees. Cut a piece of parchment to fit an 8" diameter cake pan. Line pan with parchment. Set aside. In a skillet, heat oil. Add cranberries, saute for 3 min. Add cinnamon, saute for 2 min. more. Set aside. In a bowl, mix flour, baking powder and baking soda. In a bowl, beat sugar and butter. Add eggs, mix until smooth. Add flour mixture and buttermilk alternately to egg mixture, mix until blended. FOLD in cooked chopped cranberries. Mix well. Add batter to pan, bake 40 min. or until done. Cool cake in pan 15 min. Invert cake onto a cooling rack. Let cake cool 20 min. more, peel off paper, invert cake to cool completely right side up. Garnish with a sprinkle of powdered sugar, then SERVE...
