Try this Enchilada Sauce for Chicken Enchiladas recipe, or contribute your own.
In large pan saute flour in oil for one minute, add spices and cook for an additional minute. Add broth, tomato sauce and lime juice and bring to a boil stirring constantly till thickened. Assemble tortillas with chicken and cooked onion, laying side by side in pan that has been coated with sauce. When pan is full, pour additional sauce over top, add grated cheddar cheese. Bake in oven til warmed through and cheese has melted. Serve on a bed of lettuce and serve with sour cream, salsa and jalapeno peppers to the side. morganstrong 2y agoVery nice recipe & easy to customize. Thank you for posting. If you want thicker sauce add a table spoon or 2 of tomato paste.
cryshy 2y agoI used this sauce with the Chicken Enchilada Casserole recipe and it was very good. I didn't do the extra in the preparation, only the sauce.

staciemag1 9y agoGood recipe, I doubled it ,added a 6 ounce can of tomato paste, and used homemade chicken broth.
RKG1 9y agoBeing on a salt reduced diet has me try a lot of home made spices and sauces. This one was pretty good. I used a homemade turkey broth instead of chicken, no salt in it. Not to spicy - I cut the cayenne in half at first but after tasting it added the rest. A keeper.
