This soup mix came to us as a dry mix gift. The ingredients for the mix, as well as the additional ingredients and directions, are included here.
If this is to be given as a gift, prepare the dry ingredients in three baggies: 1) soup mix (bouillon, onions, seasoning and rice); 2) beans and peas; 3) macaroni. Then attach the following directions to the package:
In addition to the three parts of the soup mix that you received, you will need 1 pound lean ground beef, 3 quarts of water, and a large can (28 ounces) of diced tomatoes (or two small cans, one regular and one roasted garlic flavor). If using plain tomatoes, add a small amount of garlic powder to the soup.
To prepare the soup: soak the beans and peas overnight in a large pan of water. On the next day, drain and rinse the beans. In a large pan or Dutch oven (6 quart), brown the beef, drain. Add the 3 quarts of water, tomatoes, soup mix and beans; bring to a boil. Reduce heat; cover and simmer 45 minutes to two hours until beans are tender. Add macaroni, cover and simmer 15-20 minutes or until macaroni is tender. The original recipe suggests blending the tomatoes a bit before adding to the soup to eliminate chunks.
This soup warms up nicely for leftovers or lunch. It is low calorie and low fat!!
