Mom always made the best Red Velvet Cake. Everyone who had a slilce, always claimed it was the absolute best ever eaten. I have never had any that came close to it, either. I found this recipe in her handwriting as we were cleaning out some of our unneeded items. Saving it here for posterity.
Layers:
1. Cream sugar and shortening
2. Add Eggs
3. Mix cocoa and coloring in cup and add to former mixture
4. In same cup, mix milk and soda. Add to former mixture.
5. Sift flour and salt together and add to mixture
6. Fold in vinegar lightly
7. Bake in 3 layers at 300 degrees F. for 20-25 minutes. Cool Thoroughly before putting on icing.
Icing:
1. Dissolve the cornstarch and cold water in small pot and cook until thickened. Chill before using it with rest of icing ingredients.
2. Mix butter, vanilla, and sugar. Beat thoroughly.
3. Add chilled cornstarch mixture and blend throughly. Spread between layers and ice sides and top of cake.
Use REAL butter. Somehow, margarine does NOT do well in this recipe. Sometime, Mom would double the icing recipe for a richer, more luscious cake! She did that when she would slice the layers to double the number of layers, resulting in nice thin layers with lots of that creamy, tasty icing!
