Sprinkle with salt and five spice powder combined, rub well into all parts of chicken and leave for 30 minutes (while chicken is marinating, make sauce).
Mix cornflower or chestnut flour with enough cold water to form a thick paste.
Heat oil until very hot, dip chicken pieces in the flour paste, drain excess and drop a few pieces at a time into the oil.
Fry quickly until chicken changes color and is cooked.
Drain on absorbent paper.
When all the chicken has been fried arrange on serving plate, pour sauce over and serve immediately.
CRAB SAUCE:
Flake crab, removing any bony tissue.
Heat oil in a small saucepan and fry ginger and spring onions on a low heat for a minute, not allowing them to brown.
Add stock, bring to the boil.
Add crab meat and season with pepper, and when sauce returns to the boil, dribble in the egg white, stirring with a fork. It will set in
shreds similar to chrysanthemum petals.
Stir in arrowroot mixed with cold water.
Cook, stirring, until clear and thick.
