A nice flavour filled seafood chowder.
In a large saucepan saute onion, celery and butter.
Add water and veggies and bring to a boil.
Add the fish, reduce heat and simmer for 10 minutes longer.
Stir in milk and cheese, stir until cheese is melted. DO NOT BOIL
Serve garnished with parsley or chives.
Cut the whitefish into 1/2 inch cubes while still frozen and it will maintain its shape. Some lobster or crab flavoured pollock would also be good with it for a different flavour. We had this for supper tonight - much better than any canned chowder and no where near as much salt.
