Ready in 1 hour 30 minutes; part of Mother's Day collection

Just the way nonna makes it!

500 grams (about 18 oz.) Mascarpone Cheese
3 Eggs; yolks and whites seperated
5 tablespoons Sugar
1.5 cups strong black espresso
1 lb lady fingers
1/8 cup cocoa powder

Original recipe makes 15 Servings

Bring mascarpone to room temperature.

Brew coffee and bring to room temperature.

Beat egg whites until loose peaks form.

Beat together egg yolks with sugar.

Slowly fold together mascarpone and egg whites.

Combine with egg yolks until creamy and easily spreadable.

Pour espresso into shallow dish.

Quickly dip each side of the lady finger in the espresso, you do not want to have them sitting in the coffee for long... do this very quickly.

Lay lady fingers across bottom of rectangular baking dish, once bottom is covered spread mascarpone over the top and continue layering until you run out of cookies.

Top with remaining mascarpone and sprinkle top with cocoa powder.

Refrigerate and serve chilled.
