Suggest a better description- Cook sausage over medium-high heat until well done. Drain. Set aside.
- Melt 1 tablespoon butter in skillet. Add green onion and mushrooms. Stir and cook until tender.
- In a large bowl, mix eggs, cottage cheese, Monterey Jack cheese, and chilies.
- Stir in sausage, green onion, and mushrooms.
- Cover and refrigerate overnight.
- Preheat oven to 350 degrees.
- Lightly grease 9 x 13 baking dish.
- In a bowl, sift together flour, baking powder, and salt. Blend in 1/3 cup melted butter. Stir flour mixture into egg mixture.
- Pour into baking dish.
- Bake 40 - 50 minutes
- Let stand 10 minutes before serving
