Suggest a better descriptionTrabajar la manteca fría con la harina hasta lograr una textura arenosa. Incorporar la yema batida con el azúcar. No trabajar demasiado la masa. Estirar cubierta con film. Estirar fina y cubrir un molde (desmontable) de 18 cm de diámetro (llevar al frío). Mezclar la ricota con 75 gramos de azúcar, la esencia de vainilla, la ralladura de limón, las yemas y la fécula. Agregar las claras batidas a nieve con el azúcar, a punto merengue, y por ultimo incorporar con cuidado la manteca derretida. Dividir el relleno en dos partes, a una agregarle el chocolate fundido a no menos de 35ºC, intercalar capas de relleno formando un marmolado sobre la masa quebrada. Cocinar en horno precalentado a 160ºC, por alrededor de 45 a 50 minutos.
