Easy to prepare, delicious salad, which is a great side for roast lamb!
Mix apple, peas and scallions in bowl. Combine the rest of the ingredients and mix well to form dressing. Add dressing to apple mixture and stir lightly. Serve over crisp greens.
One 10 ounce package of frozen peas may be substituted by running hot water over the peas in a collander until thawed. Then, rinse with cold water and drain thoroughly or towel dry.
