1. Begin boiling the Apple cider before assembling the rest of the ingredients. Reduce to exactly 1 cup. If over reduced, add more Apple cider or water.
2. While cider is reducing, preheat oven to 350 F. Grease and flour a Bundt pan.
3. Whisk flour, salt, baking powder, baking soda, cinnamon and allspice in large bowl until combined.
4. Place confectioners sugar in small bowl.
5. Add 2 tablespoons of cider reduction to confectioners sugar and whisk to form a smooth icing. Cover with plastic wrap and set aside.
6. Set aside another 6 tablespoons of cider reduction.
7. Pour remaining 1/2 cup of the cider reduction into a large bowl. Add melted butter, brown sugar, eggs and vanilla and whisk until smooth.
8. Pour cider mixture over flour mixture and stir with a rubber spatula until almost fully combined.
9. Add Malic acid (if using) to shredded apples, then stir apples and any accumulated juices into the mix.
10. Transfer mixture to prepared Bundt pan and smooth top.
11. Bake until skewer in center of cake comes out clean, 50-65 minutes.
12. Transfer pan to a wire rack set in sheet pan. Brush exposed surface with 1 tablespoons of reserved cider reduction.
13. Let cake cool for 10 minutes then invert onto wire rack and remove pan.
14. Brush top and sides of cake with remaining 5 tablespoons of cider reduction.
15. Let cake cool for 20 minutes.
16. Stir icing to loosen. Add a few drops of Apple cider or water to get the right consistency as needed.
17. Drizzle evenly over cake.
18. Let cake cool completely, at least 2 hours, before serving.
19. Cooled cake can be wrapped loosely in plastic wrap and stored at room temperature for three days.
