In large bowl, toss together Brussels Sprouts, onion, kielbasa, potatoes and carrots. Drizzle oil over mixture, then toss again. Sprinkle in sage, salt and pepper. Transfer to a large, rimmed baking sheet, covered with foil, and sprayed with Pam. Arrange in an even layer. Bake for 15 minutes.
Meanwhile, toss apples in remnants of the spices and oil. Add apple chunks to baking sheet. Continue cooking. Check after a total of 30 minutes. Remove when everything begins to carmelize.
