Suggest a better descriptionMix apples, sugars, spices, salt, lemon juice and zest. Let sit for at least 30 minutes.
Make dough, divide into two pieces (330/360 gms) and let sit in refrigerator.
Cook apples, covered at medium high for 10 minutes, stirring at least once.
Make slurry with corn starch and water and add to pot. Stir in to pot and cook for about 3 minutes or until thick. Take off heat and add butter. Let cool to room temperature.
Roll out dough and place bottom into deep dish. Add cooled apple. Put on top dough and crimp. Put in freezer while oven preheats to 425°F. Egg (or milk) wash, sprinkle with sugar, and put in bottom rack of oven for 20 minutes. Put on aluminum crust protector, reduce to 350°F and cook for 20-30 more minutes or until golden brown.
Remove from oven and let cool.
