1. Preheat oven to 350 degrees F.
2. Grease a 9 inch round cake pan with cooking spray.
3. In a small saucepan, melt together brown sugar, butter, vanilla, salt and cinnamon. Cook until slightly thickened, about 2 minutes.
4. Pour caramel sauce into prepared cake pan and layer apples on top.
5. In a large bowl, whisk together flour, baking powder, cinnamon, salt and nutmeg if using.
6. In another large bowl using hand mixer, or in stand mixer bowl, beat together butter and sugars until softened.
7. Add eggs one at a time, then add vanilla.
8. Add half the dry ingredients, beating until just combined.
9. Pour in milk and mix until fully incorporated.
10. Add remaining dry mixture and stir until just combined.
11. Pour batter into cake pan over the apples and bake 50-60 minutes (50 was good in my oven), or until cake tester or toothpick comes out clean.
12. Let cool in pan for 15 minutes, then invert.
