Place chicken breast in crock pot. Add water to not quite covering the chicken. Sprinkle the italian seasoning over the top and cook 6 hours on high. Save the liquid. Shred the chicken.
Add to the liquid sour cream, cream cheese and cream of chicken soup whisk until smooth. Add the chicken to the liquid.
