In 1 cup measure combine buttermilk and bouillon. Let stand 10 minutes. Place chicken in shallow dish. Stir buttermilk mixture and pour over chicken. Let stand 30 minutes.
In plastic bag combine stuffing mix,cheese, parsley, lemon rind and pepper. Add chicken a few pieces at a time. Shake to coat. Place in lightly greased shallow baking dish. Drizzle with butter.
Bake at 350 degrees for one hour until golden and crisp.
