Suggest a better descriptionPierce russet potato multiple times with a fork and place in a microwave on high 5 minutes. Turn over and microwave another 5 minutes.
Slice turkey bacon into 1/2-inch pieces. Cook in a small skillet over medium-high heat until fat is rendered and turkey bacon is crisp around the edges, about 5 minutes. Remove to a paper-towel covered plate.
Meanwhile, fill a pot with a few inches of water and set over high heat. Slice broccoli florets off stalk; when water is boiling, add to the pot. Cook about 4 minutes, until broccoli is bright green. Drain and set aside.Once potatoes are cooked, let cool 1 to 2 minutes, then cut in half lengthwise and drizzle with olive oil. Use a fork to slightly mash up the center. Top each half with broccoli, turkey bacon bits, shredded cheddar and salt and pepper to taste
