* Baked in an 10" Lodge Cast Iron Skillet
PREHEAT OVEN TO 375.
Seed and mince chile, chop shallot and peel and chop shrimp. In the cast iron skillet, melt the butter over medium heat. Add the shallot and chile, and cook for a minute or two until they begin to soften. Add the shrimp and cook until cooked through, about 3 minutes.
Remove the skillet from the heat, and stir in the sour cream, cream cheese, lemon juice, MOST of the cheddar cheese and the Old Bay and salt and pepper. Stir together well. Top with the extra cheddar.
Bake at 375 for 30 minutes, or until the top is bubbling hot in the center and browning at the edges. Remove and let cool for a minute.
Serve with chips while warm.
