Suggest a better descriptionBeat together the butter and sugar until creamy and light. Beat in 1 egg at a time. Stir in the lemon rind. In a separate bowl, combine the flour, baking powder, baking soda, salt and wheat germ. Stir into the butter mixture with the banana. Blend well. Do not overmix. Stir in apricots.
Pour mixture into a greased loaf pan. Bake at 350 degree for about 60 minutes until golden brown and a toothpick comes out clean. Cool in pan for about 10 minutes before carefully turning out onto a rack to cool completely.
Good Served With:
Whipped cream cheese and apricot jam. Also delicious served plain or with butter.
