The whole family enjoys this for dinner.
Heat ghee in pot. Add chili, ginger, garlic, onion, garam masala, and tomatoes. Cook for a few minutes till onions soften. Add potato, cauliflower, turmeric, salt, sugar, and cilantro. Cook under medium-high heat, stirring, for about 4 minutes. Lower heat and cover and simmer for about 15 minutes, stirring occasionally. If it sticks, add a bit of water but not too much. Serve with paratha or rice.
