A crispy crust holds caramelized onions, cheese, grilled chicken and freshly chopped cilantro topped off with a light drizzle of BBQ sauce.
1. Preheat oven to 425° F. Spread pizza dough over a greased 8-inch x 10-inch cookie sheet. Bake for 8 minutes. Reserve.
2. Meanwhile, preheat grill. Season the chicken breast with salt and pepper, then brush with oil. Grill chicken for 5 minutes per side or until an internal temperature of 165° F is reached. Allow time to chill then slice into ½-inch strips. Reserve.
3. Spread ½ cup of BBQ sauce evenly over the par-baked pizza crust.
4. Top with shredded Mozzarella cheese, shredded Gouda cheese, caramelized red onions and sliced chicken breast. Bake for 10 minutes or until cheese is melted. Drizzle with remaining ¼ cup of BBQ sauce and top with fresh cilantro leaves.
