Beef Stew with tomato base
In a large pot, heat oil. Coat cubed stew meat with flour and brown in heated oil; drain any excess oil. Add tomato sauce, vegetables, potatoes, and onion. Add enough water to bring to desired consistency (stew will thicken as it cooks). Add small amount of various spices; taste as stew cooks to determine which spices to add. Let simmer at low temperature until all vegetables are tender, normally two hours. Serve with your choice of bread or crackers.
You can use frozen, fresh, or canned vegetables in any combination you prefer. Use spices sparingly until stew has simmered for a period of time to ensure you do not over season the stew.
